Pistachio Wild Rice Nuts Over Fish Topping Recipe

Try this pistachio wild rice side with your next meal. It goes great with steak, chicken or fish.

Ingredients

½ lb Wild Rice

6 C Chicken Stock

1 C shelled Pistachio’s Whole

4T Nuts Over Fish® Topping

6 Green Onions

Grated Rind of 1 Lemon

¼ C Olive Oil

1/3 C Fresh Lemon Juice

Directions

  1. Rinse rice under cold water using a strainer.

  2. Add chicken stock to a medium saucepan and bring to a boil. Add rice. Adjust heat to simmer and cook uncovered for 50 minutes. Drain rice through a fine strainer.

  3. Add remaining ingredients to rice and mix. Allow rice to sit for a couple of hours before serving so flavors can develop.
