Almond Roasted Vegetables Nuts Over Fish Topping Recipe

Ingredients

1 Red Pepper cut into strips

1 Yellow Pepper cut into strips

1 Orange Pepper cut into strips

2 Onions cut into quarters

8 oz Mushrooms Sliced

1 3oz package Nuts Over Fish® Almond Topping

2 garlic cloves crushed

3 T Olive oil

Balsamic Vinegar

Prep Time: 15 minutes

Cook Time: 30 minutes


Directions

  1. Preheat oven to 450 degrees.
  2. Whisk together olive oil, garlic, Nuts Over Fish® Almond Topping.
  3. Place vegetables on a baking sheet in a single layer. Pour mixture over vegetables.
  4. Bake for 15 minutes. Turn vegetables over. Bake 15 minutes.
  5. Drizzle balsamic vinegar over vegetables. Serve hot or room temperature
