Although we crafted our Nuts Over Fish nut toppings with fish in mind, their blends of spices and other ingredients taste great on other foods as well. If not everyone in your family loves fish, or you want to mix up your weeknight menu, you can use our toppings for other meals. One of the easiest ways to use our nut toppings and appreciate the flavors and spices is to use them to make salad dressings. This month’s blog is a spotlight on one of our favorite salad dressing recipes that uses our pistachio nut topping. The dill and pistachios add a delightful flavor to salads or you can use it as a marinade.
Pistachio Nut & Spices Champagne Vinaigrette
Ingredients
- One crushed garlic clove
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh-squeezed lemon juice
- ⅓ cup champagne vinegar
- ¼ cup Nuts Over Fish pistachio topping
- ½ teaspoon black pepper
- ½ cup extra virgin olive oil
Instructions
In a small bowl, whisk together the crushed garlic, mustard, vinegar, lemon juice, pistachio topping, and pepper. Once they are well combined, gently whisk in the olive oil in a slow, steady stream. The other ingredients should be evenly distributed throughout the olive oil.
Now that all your ingredients are combined, your champagne vinaigrette dressing is ready to go! You can use it as a salad dressing or as a marinade for cooked shrimp. Simply cover some cooked shrimp in the dressing and let it marinate in the refrigerator overnight. Our recipe yields about ¾ of a cup of dressing, so you may need to double it depending on how much shrimp you want to marinate. Once the shrimp is done marinating and all the delicious flavors have sunk in, add them to your salad for extra protein and flavor!
