Almond Roasted Vegetables

Ingredients

  • 1 Red Pepper cut into strips
  • 1 Yellow Pepper cut into strips
  • 1 Orange Pepper cut into strips
  • 2 Onions cut into quarters
  • 8 oz Mushrooms Sliced
  • 1 3oz package Nuts Over Fish® Almond Topping
  • 2 garlic cloves crushed
  • 3 T Olive oil
  • Balsamic Vinegar

Makes 4 Servings

  1. Preheat oven to 450 degrees.
  2. Whisk together olive oil, garlic, Nuts Over Fish® Almond Topping.
  3. Place vegetables on a baking sheet in a single layer. Pour mixture over vegetables.
  4. Bake for 15 minutes. Turn vegetables over. Bake 15 minutes.
  5. Drizzle balsamic vinegar over vegetables. Serve hot or at room temperature
