Almond Roasted Vegetables
Cook time 45 minutes
Ingredients
1 Red Pepper cut into strips
1 Yellow Pepper cut into strips
1 Orange Pepper cut into strips
2 Onions cut into quarters
8 oz Mushrooms Sliced
1 3oz package Nuts Over Fish® Almond Topping
2 garlic cloves crushed
3 T Olive oil
Balsamic Vinegar
Makes 4 Servings
Preheat oven to 450 degrees.
Whisk together olive oil, garlic, Nuts Over Fish® Almond Topping.
Place vegetables on a baking sheet in a single layer. Pour mixture over vegetables.
Bake for 15 minutes. Turn vegetables over. Bake 15 minutes.
Drizzle balsamic vinegar over vegetables. Serve hot or at room temperature
