Pistachio Carrots

Pistachio carrots

Ingredients

  • 12 Carrots, peeled and cut into 1“ lengths
  • 4T Butter
  • 1/3C Nuts Over Fish® Pistachio Topping
  • 1 Lemon

Makes 6 Servings

  1. Place carrots pieces in a saucepan, add water to cover, and cook until tender, 25-30 minutes.
  2. Melt butter in a saucepan. Add Nuts Over Fish® Topping and mix. Set aside.
  3. When carrots are done, drain and return to pot. Pour butter mixture over them and cook over low heat for 5 minutes, stirring occasionally.
  4. Transfer to serving dish, squeeze lemon to your taste, and serve immediately.
