Pistachio Champagne Vinaigrette

1 Garlic clove, crushed
2T Dijon Mustard
2T fresh Lemon Juice
1/3 C Champagne Vinegar
¼ C Nuts Over Fish® Pistachio Topping
½ t Pepper
½ C Olive Oil
Makes ¾ of a Cup Servings
Whisk together the garlic, mustard, vinegar, lemon juice, Nuts Over Fish®, Pistachio Topping, and pepper. Slowly whisk in the olive oil in a slow, steady stream.
Can be used as a salad dressing!
Can be used to marinate cooked shrimp as an appetizer!
Just add 2lbs shelled cooked shrimp and let marinate in the refrigerator overnight. Place on a bed of lettuce. Delicious!
