Pistachio Champagne Vinaigrette

Ingredients

  • 1 Garlic clove, crushed
  • 2T Dijon Mustard
  • 2T fresh Lemon Juice
  • 1/3 C Champagne Vinegar
  • ¼ C Nuts Over Fish® Pistachio Topping
  • ½ t Pepper
  • ½ C Olive Oil

Makes ¾ of a Cup Servings

  1. Whisk together the garlic, mustard, vinegar, lemon juice, Nuts Over Fish®, Pistachio Topping, and pepper. Slowly whisk in the olive oil in a slow, steady stream.
  2. Can be used as a salad dressing!
  3. Can be used to marinate cooked shrimp as an appetizer!
  4. Just add 2lbs shelled cooked shrimp and let marinate in the refrigerator overnight. Place on a bed of lettuce. Delicious!
