Pistachio Shrimp & Snow Peas
Makes 6-8 Servings
- Blanch snow peas in boiling water for 3 minutes, drop into cold water, so peas stay green. Drain. Set Aside
- Melt 3T butter and sauté apples for 6 minutes over medium heat. Sprinkle Nuts Over Fish® over the cooked apples and raise the heat, constantly stirring until caramelized. Set aside. In the same skillet, melt the remaining 3T butter, and cook onion covered for 20 minutes. Raise heat to add shrimp and cook for 3 minutes. Set aside.
- Pour wine into the skillet and reduce over high heat to about 2/3 of a cup.
- Reduce heat and add mustard and coconut milk, and simmer uncovered for 15 minutes.
- Add, snow peas, apples, and shrimp and heat until hot.
- Serve over rice or pasta.

Makes 6-8 Servings
- Simply press Nuts Over Fish® Pistachio Topping onto the surface of your salmon to coat.
- Spray lightly with olive oil and squeeze a wedge of lemon.
- Bake at 425 degrees. Allow 15-18 minutes of cooking time per inch of fish.

Makes 6 Servings
- Place carrots pieces in a saucepan, add water to cover, and cook until tender, 25-30 minutes.
- Melt butter in a saucepan. Add Nuts Over Fish® Topping and mix. Set aside.
- When carrots are done, drain and return to pot. Pour butter mixture over them and cook over low heat for 5 minutes, stirring occasionally.
- Transfer to serving dish, squeeze lemon to your taste, and serve immediately.
