An Almond Crusted Salmon Recipe for Your Holiday Dinner

Is fish making an appearance at your holiday table? In many countries and cultures, fish is a traditional dish for Christmas dinner. If you want to try something different this year or make something healthier than the usual holiday fare, why not make fish the center of your meal? Almond Crusted Parmesan Salmon

Ingredients

  • Two 5 to 6-ounce salmon filets
  • ⅓ cup olive oil
  • Nuts Over Fish Sugar-Free Almond topping
  • ½ cup grated parmesan cheese
  • Minced parsley
  • Salt and pepper to taste
  • Two cloves of minced garlic
  • Lemon wedges

 

Preparation and Cooking Instructions

Preheat the oven to 400º F. Combine the almond topping, parmesan, parsley, garlic, salt, and pepper in a shallow bowl or plate. Use a few spoonfuls of the almond topping to reach a ratio suited to your taste. Add in the parsley a tablespoon at a time until you’ve put in an amount you like. Put the olive oil on another shallow plate.

Dip the salmon filets in the olive oil so they are well coated. Then move the filets to the almond and parmesan mixture. Cover them in the mixture, gently pressing all sides of the salmon so it sticks well.

Once the filets are completely coated in the almond and parmesan mixture, place them in a baking dish and drizzle them with olive oil if you like. Bake for 10 to 13 minutes, depending on the thickness of your fish. When it’s done, squeeze your lemon wedges over the salmon and enjoy!
